lunch salads. Seriously, I think I could eat them every day. The only problem is I'm not going to grill chicken every day. That's been easily solved, though. Every time Brian grills chicken, I get him to grill a few extra pieces of chicken. Then, I cut it into strips and freeze it in individual serving sizes. This allows me to quickly have enough chicken for a salad any time.
My favorite chicken is that simply marinated in my low-fat Italian dressing (see link above) and red wine vinegar. My very close second is from this grilled chicken and pineapple recipe. Both the chicken and the pineapple are excellent on a salad.
